Diet plays a critical role in contributing to health inequities. Community‐trusted institutions with a long legacy can play a key role in addressing diet‑related challenges such as obesity and persistent chronic conditions. Establishing a Center of Excellence (COE) for Nutrition, Health, Wellness, and Quality of Life within these institutions is timely—it would enhance their capabilities in research, education, and outreach to improve health outcomes.
States including Louisiana, North Carolina, and Alabama rank among the highest in obesity rates. Southern University, North Carolina A&T State University, and Tuskegee University have complementary expertise in research, education, and outreach, and are well positioned to collaborate on a COE aligned with the land‑grant mission to improve population well‑being.


Our Objectives
The primary goal of this Center of Excellence is to expand the capacity of 1890 institutions to support community health through integrated efforts in nutrition-focused research, education, and outreach. The specific objectives are:
1) Research: To enhance institutional research capabilities related to food intake and associated nutrition and health outcomes.
2) Teaching: To strengthen and advance innovative educational strategies in food and nutrition for students at 1890 institutions.
3) Extension: To deliver multi-state outreach programs that provide training and education in food and nutrition to diverse communities.
